The winery
is eqquiped with the most modern enological eqquipments.
Let us briefly see the strength of the Winery Baldassari
on the tecnical-enological plan.
- The red grapes
are conveyed in wine-makers of stainless steel
directly by gravity beeing placed, a level under
the establishment used for the draining of the
grapes.This allows a minor attrition and
a minor production of lees.
- The racking occurs by the use
of trucks and belt elevators and not by pomps
and gears.This way the fermented grape marcs go
through a softner treatment and there
is a minor production of lees.
- In the vinification
for the white wine, the juice that pours out from
the pneumatic press becomes clear naturally and
in a static way inside tanks with cooling belt,
completely insulated.This allows a minor
oxygenation of the product and a better decantation
at a controlled temparature, avoiding
this way to start an undesired fermentation.
- Being cold
and hot in all tanks, in the winery and inside
the establishment for the bottle aging and packaging,
allows it to keep constant the desired
temperature all year round.
